these guys are addictive. lightly “breaded” and nice and crunchy. better than boneless wings.
1 head fresh cauliflower
2/3 c whole wheat flour
1 tbsp tomato paste
2 tbsp garlic powder
1 tbsp onion powder
2 tsp smoked paprika
1 tsp dried parsely
1 tsp dried oregano
1/2 c hot sauce
1/4 c butter
preheat oven to 425º. line baking sheets (i needed two) with parchment paper.
trim florets from the head of cauliflower into bite size pieces. set aside.
using a food processor, combine flour, tomato paste, and spices with half a cup of water. puree until thick. transfer the batter to a large bowl. toss the cauliflower until evenly coated.
place individual pieces on the baking sheets, making sure not to overlap them, in order for all of them to get perfectly crispy. bake for 25-30 minutes.
in the meantime, melt butter in a small saucepan on low heat. add hot sauce, whisk together and remove from heat.
remove the cauliflower from the oven. let cool slightly and toss in hot sauce. they are best if eaten right away! but they still taste great reheated.
