this is so simple and so delicious. although, you’ll need to chill the canned coconut cream over night in the fridge. it keeps for about a week in an air tight container in the fridge.
1 can coconut cream (not milk!)
2-4 tbsp confectioners sugar
remove the cream from the can, but leave the little bit of liquid at the bottom. using a stand (or hand) mixer, beat on high for about 1 minute. add sugar by the tbsp and beat for another 4-5 minutes until fluffy. keep refrigerated until ready to use.
