having a veggie garden is the best. it forces you to be creative, because the amount of beans you yield is insane. fresh green beans are definitely the way to go for this salad. it’s crunchy and flavorful.
1 lb. fresh green beans
1/2 c peanuts, chopped
1/4 c sesame oil
1/4 c lemon juice
1/2 inch chunk of ginger, peeled and finely diced
3 cloves garlic, diced
2 tbsp sesame seeds
preheat oven to 250. bring a large pot of water to a boil. blanche beans for 5 minutes. drain and throw the beans in a bowl of ice water.
spread peanuts evenly on a sheet pan. toast the peanuts for 8-10 minutes, until they start to brown. set aside and let cool.
whisk together the sesame oil, lemon juice, ginger and garlic. drain beans and toss with dressing. add peanuts right before serving.
