these beets are from our garden! my boyfriend hates beets, won’t touch em, but he loved this soup! i got this recipe from my pal, Angie. it’s quick and easy to make and tastes good hot or chilled!
1 inch chunk of ginger, peeled and minced
3 large cloves of garlic, diced
1 yellow onion, diced
2 tbsp olive oil
4 large-ish red (or golden) beets, peeled and chopped
1 can coconut milk (14.5 or 15 oz)
4 c veggie stock
couple dashes of salt & pepper
fresh herbs such as parsley, thyme or sage
a few spoonfuls of plain greek yogurt
heat oil in a large pot on medium. sauté the onions until almost translucent, add garlic and ginger. stir often, about 5 minutes.
add beets and broth, bring to a boil and reduce heat to low. simmer for 20 minutes or so, until beets are tender. using an emersion blender or food processor, blend until smooth. stir in coconut milk. garnish with herbs and a spoonful of yogurt.
