i love these bars, they’re great for breakfast or a little boost of energy.
1 c medjool dates, pitted
1 c nuts (almonds, cashews or pecans work best)
1½ c toasted rolled oats
1/2 c pumpkin seeds or sunflower seeds
1/4 c flax seeds
1/2 c dried cherries, cranberries or raisins
1/4 c smooth natural peanut butter
1/4 c honey
toasted oats in the oven at 300º for 10-15 minutes.
in the mean time, pulse dates in a food processor until it forms a bit of a dough ball. place in a bowl with nuts, seeds and dried fruit, stir and stir… it’s going to take some effort. once the oats are toasted, add them in and stir some more.
heat peanut butter & honey in a small sauce pan over low heat, keep on it and stir occasionally until melted together and smooth. pour melted mixture over the dates and nuts. stir until combined.
smoosh the bars down into an 8×8 baking dish, lined with parchment paper. cover with plastic wrap and refrigerate for 30 minutes or so.
cut into 8 bars. i wrap them individually in wax paper (good for when you’re on the go) and store them in an air tight container.
they’ll keep for about a week.
