1 c medjool dates (about 12-14)
1 c raw cashews
1/2 c raisins
1/2 c golden raisins
1 tsp vanilla extract
1 tbsp cinnamon
1 tsp ground ginger
2 tbsp oats
remove pits from the dates. throw dates in food processor and pulse a few times. add cashews and continue to pulse until well combined. add vanilla, cinnamon and ginger. pulse a few times. add the raisins and oats, pulse until a dough like consistently is formed.
line a 9×9 baking dish with plastic wrap, with a bit hanging over the edges. transfer the dough and press firmly until evenly flat. spraying the back of a spatula with cooking spray/olive oil and pressing can help. or just use your fingers!
chill in the fridge for at least 30 minutes. using the plastic wrap, lift the bars and place on a cutting board. cut into 8 even bars. store in air tight container. will keep for about 7-10 days.
