for a few weeks now, we’ve been on a burger kick for framily dinner. i mean, it is summer after all. this is a healthier version of traditional boring beef burgers on the grill.
1 lb fresh salmon fillets
1 c panko bread crumbs
3 scallions, chopped
a handful fresh cilantro, chopped
1 tbsp fresh grated ginger
2 cloves garlic, minced
2 eggs, beaten
3 tbsp liquid aminos
2 tbsp olive oil
1 tbsp fresh lemon juice
1 pack of soft fresh rolls.
1/2 red onion thinly sliced
a liberal amount of feta lime dressing
cut salmon into chunks and throw into food processor. pulse a couple times until coarsely ground. set aside.
in a separate bowl beat the eggs. add the herbs, ginger, garlic, liquid aminos, oil, lemon juice and panko. mix in ground salmon until combined.
shape into patties, and put them in the fridge on a parchment paper lined pan for about 30 minutes to an hour.
grill for about 10-12 minutes per side. place them on a bun, top with feta dressing and sliced onions.
