my boyfriend thought these were from the bakery at Wegmans. that’s how good they are.
2 c unbleached flour
1/2 tsp baking soda
1/2 tsp sea salt
3/4 c salted butter, melted and slightly cooled
1 c light brown sugar, packed
1/2 c white sugar
1 tbsp vanilla extract
1 egg yolk
1 c dark chocolate chips
1 c milk chocolate chips
preheat the oven to 325º.
thoroughly whisk together the flour, baking soda and salt in a medium bowl. set aside.
in your mixing bowl, combine the sugars, butter and vanilla. add the egg and additional yolk and mix until light and fluffy.
add the dry ingredients half a cup at a time until just combined. add chocolate chips. don’t over mix!
grab a healthy tablespoonish hunk of cookie dough and roll into a ball, taller than wide. i’ve found this keeps the cookies from spreading to thin and keeps ’em chewy. place them on a parchment paper lined cookie sheet, 1 to 1-1/2 inches apart. bake for 10-12 minutes. you may need to rotate the cookie sheets half way through, depending on your oven.
they will look a little underdone but really they are just perfect. let them cool for about 10 mins or so. enjoy!
