as much as I love breakfast foods, I’m not always in the mood to make breakfast in the morning. quiche is great because you can pretty much throw in whatever you have and it reheats well. I usually buy a premade pie crust to save time, and they’re good to have on hand for last minute things.
1 premade pie crust
2 tsp olive oil
4 large eggs
1 c milk or plain almond milk
8 or so slices of turkey bacon
1/2 a head of broccoli, chopped
1/2 c shredded sharp cheddar
1 yellow onion, chopped
2 cloves of garlic, diced
1 tsp dried sage
salt & pepper
place premade pie crust on the counter for 20 minutes before unrolling. preheat the oven to 325º.
heat oil in pan and sauté broccoli and onions until cooked, about 5-7 minutes. in another pan, cook turkey bacon until browned, let cool slightly and chop bacon.
bake crust in a pie pan for 10-12 minutes. remove from oven and fill crust with bacon, onions and broccoli.
whisk together eggs, milk, sage and salt & pepper. pour the egg mixture into pie crust and sprinkle cheese. bake for 45 minutes. let cool for a few minutes before eating.
